Baked Huevos Rancheros
I recently ordered a subscription for Food & Wine magazine to support a youth's school fundraiser. Tonight Don made this incredible dish. A play on traditional Huevos Rancheros, it substitutes tortilla chips for tortillas, and eggs are baked in the oven until lightly set. Lots of good healthy veggies in this one and delicious taste.
