Baked Eggplant with Mushroom-and-Tomato Sauce

Last recipe post and then I think I am caught up for a while. We're not fond of casseroles in our house, mainly because we don't much care for pasta. But Eggplant I do love and this is about as close as we get to a "casserole." We tried this new recipe from Cooking Light. It was fun and different, quite tasty overall. Don thought it was good but wasn't overly impressed. Reader reviews on the website gave it five stars though and I would certainly make it again make it again. Just look at the beautiful melted cheeses, mushrooms, and eggplant oozing out of the tomato base. How can you not love it?
